Tofu Scramble

One of my favorite things to do is to enjoy a lovely breakfast on the weekends with my family. Therefore, I came up with the recipe which is inspired by my strict vegetarian household where I am told, “no eggs please, but indirect eggs are fine right because I don’t really know it has eggs”! This recipe is thanks to the MANY restaurants that don’t offer savory breakfast items for vegetarians.

How to serve:

  • Keep it simple: Serve it in a plate with a side of toasted bagel or bread. Squeeze some Tabasco if you are feeling hot or any of the YellowBird sauces are great too !
  • Wrap it up: Warm up a tortilla, add sliced avocado, tomato, onion, lettuce, spicy mayo & tofu scramble.
  • Squish it up: Toast 2 slices of bread, add your tofu scramble and add whatever topping you like !


  • 1 Packet of firm tofu
  • 1 small-medium sized onion
  • 1 tablespoon Garlic paste (you can add less if you are not a fan of garlic)
  • 1 bell pepper (you can use any colour)
  • 1 tablespoon olive oil
  • 3 tablespoon Nutritional Yeast
  • 1 jalapeno (optional)
  • 1/2 teaspoon Turmeric
  • 1 teaspoon Paprika powder
  • 1/4 teaspoon Harissa powder
  • Salt & Pepper to taste
  • 1 tablespoon milk (heavy cream works or any non-dairy alternate)
  • Green onions (for garnishing)

How to make

  1. Finely chop the onion, bell pepper, jalapeno in small dices. Set aside. Chopped Veggies
  2. Crumble the tofu into a separate bowl and set aside. Crumbled Tofu
  3. In a pan heat up some olive oil (or any other flavorless oil) and start by sauteing the onions, bell peppers, jalapeno and garlic paste until they are soft. Sauted Veggies
  4. Add in the crumbled tofu and mixed well. Allow the tofu to absorb the flavors from the veggies for 3-5 minutes on low-medium heat. Keep stirring. Tofu with veggies
  5. Add in the spices: turmeric, paprika, harissa and salt and pepper to taste. Mix well. Spices
  6. Add in 1 tablespoon of milk and allow the tofu to absorb the creaminess. Mix well. Almost Ready
  7. Garnish with green onions, nutritional yeast, and serve hot. Served
