How to serve:

  • Keep it simple: Serve it in a plate with a side of toasted bagel or bread. Squeeze some Tabasco if you are feeling hot or any of the YellowBird sauces are great too !
  • Wrap it up: Warm up a tortilla, add sliced avocado, tomato, onion, lettuce, spicy mayo & tofu scramble.
  • Squish it up: Toast 2 slices of bread, add your tofu scramble and add whatever topping you like !

Ingredients:

  • 1 Packet of firm tofu
  • 1 small-medium sized onion
  • 1 tablespoon Garlic paste (you can add less if you are not a fan of garlic)
  • 1 bell pepper (you can use any colour)
  • 1 tablespoon olive oil
  • 3 tablespoon Nutritional Yeast
  • 1 jalapeno (optional)
  • 1/2 teaspoon Turmeric
  • 1 teaspoon Paprika powder
  • 1/4 teaspoon Harissa powder
  • Salt & Pepper to taste
  • 1 tablespoon milk (heavy cream works or any non-dairy alternate)
  • Green onions (for garnishing)

How to make

  1. Finely chop the onion (small/medium size), 1 bell pepper, 1 jalapeno in small dices. Set aside.
  2. Crumble 1 packet of firm tofu into a separate bowl and set aside.
  3. In a pan heat up 1 tbsp olive oil (or any other flavorless oil) and start by sauteing the onions, bell peppers, jalapeno and 1tbsp garlic paste until they are soft.
  4. Add in the crumbled tofu and mixed well. Allow the tofu to absorb the flavors from the veggies for 3-5 minutes on low-medium heat. Keep stirring.
  5. Add in the spices: 1/2 tsp turmeric, 1tsp paprika, 1/4 tsp harissa and salt and pepper to taste. Mix well.
  6. Add in 1 tablespoon of milk and allow the tofu to absorb the creaminess. Mix well.
  7. Garnish with green onions, 3 tbsp nutritional yeast, and serve hot.
