Pav Bhaji.

Ingredients:
- 2 plantains
- 1 cauliflower
- 3 small carrots
- cabbage to your liking
- 12 oz tomato paster
- 6 cups of water
- 3 tsp salt
- 2 tsp cumin-coriander powder
- 3-4 cloves of garlic
- 3 small onions
- 1 tsp turmeric
- 2-3 tsp of red chilli powder (or to taste)
- 3 tbsp olive oil
- 1/2 tsp hing (asafoetida)
- 1 tbsp Kitchen King masala
- 4 tbsp Pav Bhaji Masala
- (Optional) 1 tbsp Chole masala
- Ginger paste to taste
How to make
- Chop the plantains, cauliflower, carrots, and cabbage, and place it in the InstantPot
- Add 3 cups of water and pressure cook on High for 7 mins
- Chop the garlic and onions in a chopper until you get a paste-like consistency
- Mix 12oz of tomato paste with 3 cups of water
- Heat 3 tbsp of oil and add hing
- Add the chopped garlic and onions and saute for 1 minute
- Set the heat to low and add the tomato paste and mix everything well
- Add the Kitchen King and Pav Bhaji masala
- Mix and let it simmer for about 3-5 minutes
- Open the InstantPot and crush the veggies to your liking (there should't be big chunks of the veggies)
- Add the crushed paste-like veggies to your tomato gravy
- Add ginger, red chilli powder, coriander-cumin powder, salt, and turmeric (you can add more of less of the spices to your taste)
- Mix on low heat and add water or spices to please your soul
