Gujarati Kadhi (Probiotic soup).

Ingredients:
- 3-4 cups water
- 2 cups yogurt
- 2 - 2 1/2 tbsp chickpea (besan) flour
- 2 tsp ghee
- 2-3 cloves of garlic
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 2 pinches of asafoetida (hing)
- 5 curry leaves
- 1 tsp green chilli paste
- 2 tsp salt (or to taste)
How to make
- Whisk 2 cups yogurt and 2-2.5 tbsp chickpea flour (besan) till there are no chunks
- Mix 4 cups of water well and set aside
- Heat 2 tsp ghee with cumin and mustard seeds, and 2-3 cloves of garlic
- When it crackles add the following and sautee for 30 seconds
- 5 curry leaves
- 2 pinches of asafoetida (hing)
- Add it to the yogurt mixture, along with 2 tsp salt and 1 tsp green chilli paste, and let it come to a boil
- Reduce to simmer and heat it to your desired consistency and texture
